From Scotland to Australia

Highland cattle first arrived in Australia with Scottish settlers in the 1800s, with early folds established in the Hunter Valley and Gippsland. Today, they’re raised on farms across the country — and here in the cool-climate pastures of the Macedon Ranges, our fold continues that tradition with care, respect, and pride.

Built for the Cold

Affectionately known as hairy coos, Highland cattle are built for the elements. Their long, double-layered coat keeps them warm through even the harshest winters — with a coarse, oily outer layer that repels rain and snow, and a soft undercoat for insulation.

They’re also smaller and slower-growing than most modern breeds, which makes them hardier, more adaptable — and part of what gives Highland beef its distinctive flavour and texture.

Our Fold at Cadzow Croft

Our love of all things Scottish runs deep — and it’s part of why we chose Highland cattle.

We select for calm temperament, raising cattle that are easy to handle, groom, and care for. Calm animals not only suit our hands-on approach — they also produce better beef.

We track our genetics closely, breeding for diversity, hybrid vigour, and strong conformation: square rumps, full shoulders, and a well-balanced frame.


All of our Highlands are F Grade — meaning they are of 100% imported Scottish bloodlines and registered with the Australian Highland Cattle Society. This ensures our cattle carry the full traits of the traditional Highland breed, and reflects our commitment to maintaining authenticity, quality, and breed integrity in every generation.
