Every Part Has a Purpose

From paddock to plate — nothing is wasted

At Cadzow Croft in Victoria’s Macedon Ranges, we offer Highland beef, hides, horns, and skulls — making use of the whole animal with respect, care, and tradition.
Each product reflects our values of sustainability, quality, and respect for the Highland breed — from our grass-fed beef to beautifully tanned hides and handcrafted pieces that honour every part of the animal.

What we offer

Highland cattle have been part of Scottish life for centuries—some say millennia. Their meat has nourished generations, their hides have been crafted into rugs and leather, and their distinctive horns have found new purpose in everything from utensils to jewellery and even armour.

With their long, shaggy coats and sweeping horns, Highland cattle are an unmistakable symbol of the Scottish Highlands. Compact, hardy, and gentle-natured, they’ve become icons of the rugged landscapes they call home.

At Cadzow Croft, we honour that heritage by raising Scottish Highland cattle with care and respect here in Victoria’s Macedon Ranges. Everything we offer—from premium beef and handcrafted hides to horns and breeding stock—reflects the breed’s enduring value and our commitment to ethical, sustainable farming.

Each hide, horn, and beef box is prepared locally with respect for the animal and the land—nothing wasted, every part with a purpose

Highland Beef

Our Highland beef is a seasonal offering, available only during winter—when the cattle are in peak condition and their thick, insulating coats reflect the natural rhythms of a slow-grown life.

Grazing year-round on pasture and finished naturally, our Highland cattle produce beef that is deeply flavoursome, tender, and lean. Raised without hormones or stress, their meat reflects the heritage of the breed and our commitment to ethical, small-scale farming.

We offer curated beef boxes featuring a generous variety of cuts, including:

  • Premium Steaks – T-bone, rump, BBQ steak, scotch fillet, eye fillet, porterhouse

  • Roasts – Scotch roast, topside, silverside (fresh, not pickled)

  • Slow Cook Cuts – Brisket, osso buco, gravy beef, skirt steak, stewing steak, diced beef

  • Essentials – Sausages and premium mince

All beef is prepared by a trusted butcher and supplied frozen and cryovaced for maximum freshness—so be sure to clear some freezer space ahead of time.

Grass-fed. Hormone-free. Packed with character.

Highland Hides

Each of our Highland cow hides is completely unique — shaped by the animal’s life, the seasons, and the rich natural colours of the breed. Soft, long, and full of natural texture, they make beautiful statement rugs, wall hangings, or throws for any interior.

Our hides are tanned by a respected, chemical-free tannery in Ballarat, using traditional vegetable tanning methods that produce exceptional quality and longevity. The result is a naturally soft, durable hide that will last for years with proper care.

Every hide is a one-of-a-kind piece, reflecting the individuality of our Highland cattle. Customers love the warmth, texture, and character — with natural Highland colours including red, yellow, black, silver dun, and white.

Locally tanned. Naturally beautiful. Ethically sourced. One of a kind.
