What We Have Produced

Highland cattle have been part of Scottish life for centuries. Their meat has nourished generations, their hides have been crafted into rugs and leather, and their distinctive horns have been used to create practical and decorative pieces.

At Cadzow Croft, we honour that heritage by raising our Scottish Highland cattle with care and respect here in Victoria’s Macedon Ranges. Our hides were tanned locally using traditional vegetable tanning methods, our beef was produced in small seasonal batches, and our skulls and horns are prepared slowly and naturally.

Although we will not be offering any more hides or beef, a small number of skull and horn sets may become available once they are ready. Nothing is wasted, and every part is treated with purpose and respect.

Highland Skulls & Horns

Our Highland skulls and horns are a natural byproduct of cattle management at Cadzow Croft. Rather than allowing them to go to waste, each set is preserved and prepared with care.

Three skull and horn sets are currently being cleaned naturally over time in the paddock. They may be ready in 2027, and photographs and further details will be added once they are available.

Highland Hides

Each of our Highland cow hides was completely unique, shaped by the animal’s coat, the seasons and the natural colours of the breed. Soft, long and full of texture, they became beautiful statement rugs, wall hangings and throws.

All seven hides were prepared by a respected, chemical free tannery in Ballarat using traditional vegetable tanning methods. This produced naturally soft and durable hides that, with proper care, can be enjoyed for many years.

Our collection included three red hides, two dun hides, one yellow hide and one white hide. Each has now found a new home, with the final white hide making its way to Canada.

We will not be producing any further hides, but we are proud to preserve their story here.

Highland Beef

Our Highland beef was produced in small seasonal batches from cattle raised on pasture at Cadzow Croft. Grazing throughout the year and finished naturally, our Highlands produced beef that was deeply flavoursome, tender and lean.

Our beef boxes included a generous selection of steaks, roasts, slow cooking cuts, sausages and premium mince. Each batch was prepared by a trusted butcher, then frozen and vacuum sealed for freshness.

All of our beef has now been sold. Our remaining steers have found new homes as paddock pets, and we do not plan to produce any more beef.
